I love making chicken fajitas, it’s such a simple dinner but a really tasty and filling one. The key with fajitas is having a tasty spice mix for the chicken but also the additional sauces and chilli peppers that you can pick and choose for the ultimate fajita.

The above photo showcases my lazy chicken fajitas midweek dinner. If I really want to push the boat out I will make my own salsa and guacamole but when time is precious shop bought sauces will have to do!

The spice mix I use is (these aren’t set in stone, it can be nice to increase the amount of chilli and paprika if you want to spice things up or reduce if you fancy a cooler mix):

  • 1/2 tsp cayenne pepper
  • 1tsp cumin
  • 1tbsp chilli powder (this makes it quite spicy)
  • 1/4tsp garlic powder
  • 1tbsp paprika
  • 1tsp ground coriander

I then simply cook the chicken in a pan over a medium heat, once the chicken has coloured I then add the spice mix with the chopped onions and peppers. I give the mixture a good stir to ensure everything is coated evenly, I then leave to cook until chicken is cooked through.

Then go crazy with your extras and pile your fajita high!
