A tomato sauce can make or break a good pizza, you want a lovely balanced flavour that compliments your toppings but isn’t too overpowering. This one is very simple to make and one I think works well as a pasta sauce as well.
For this you will need:
- 400g tin of good quality plum tomatoes
- Fresh basil leaves
- 1 onion sliced
- 1 garlic clove sliced
- Salt and pepper to season
- Pinch of chilli flakes (optional)
Simply start by cooking the onion in a pan with a little oil on a medium heat for about 10 mins until is starts to soften. Then add the garlic to the pan and cook for a further 5 minutes. Keep stirring the onion and garlic so they don’t stick to the pan and burn.
Next add the tin of tomatoes and basil leaves. Break the tomatoes up with the back of a wooden spoon as you stir. Add your seasoning and chilli flakes if using. Leave to simmer for about 15 minutes.
Blend the sauce with a stick blender to a nice smooth consistency and then you’re done!
