Red Pepper Pesto

Simple pasta dishes are great, you can have them with a big salad, make extras for lunches and they work really well as part of a BBQ.

I’ve avoided buying pasta sauces in jars for years but pesto is one I always seem to end up buying ready made. I’ve made classic pesto before but wanted to try something a bit different this time. Keeping a jar of roasted red pepper is really handy, you can use them in stews, salads and this pesto recipe. This will make enough for about 2-3 people having the pasta as a main.

  • 290g roasted red peppers (you can buy these in jars, or roast your own)
  • handful parsley
  • 75g almonds
  • 2 tbsp oil
  • 50g parmesan

Simply blitz all the ingredients together and coat your cooked pasta with the pesto – doesn’t get easier than that! I like to sprinkle over a little extra cheese and some fresh parsley.
