This recipe is one I’ve adapted slightly from Deliciously Ella which is a great healthy inspiration recipe book for me. Whilst I’m not going to adopt every healthy food change Ella goes through, it’s great to pick up on a few ideas and adapt slightly to what suits you.
This recipe makes about 20 balls but I think next time I would make them slightly smaller as they are still quite rich in flavour. The ingredients are speciality in that they aren’t going to be in every supermarket, I bought mine online, but for me I knew it was worth buying them as I will use them for other areas of my cooking.
- 200g peanuts
- 400g Medjool dates
- 4 tbsp raw cacao powder
- 2 tbsp almond butter
- 2 tbsp coconut oil
- 2 tbsp chia seeds
This is a very simple recipe to make, start by blitzing the peanuts in a food processor until completely crushed – the energy bites pictured had large chunks of peanut as I wanted the crunch from them, I could have made the mixture smoother by leaving them n the processor longer.
Pit the dates and add to the processor along with all the other ingredients and 2tbsp of water and then blitz again until everything has come together.
The mixture now should be nice and sticky so get your trays/plates out now that you will put them on. Simply grab chunks of the mixture and roll into balls and then place in the fridge to set.
